Slow Cooker Chicken Stew Recipe


Our delicious and easy-to-make slow cooker chicken stew recipe is perfect for a cozy winter dinner or a busy weeknight. It's also a great way to use up leftover chicken or turkey.

Ingredients:

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 cups chicken broth
  • 1 cup diced potatoes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • Salt and pepper, to taste

Directions:

  1. In a slow cooker, combine all of the ingredients.
  2. Cover and cook on low for 6-8 hours, or until the chicken is cooked through and the vegetables are tender.
  3. Season with salt and pepper to taste.
  4. Serve hot with crusty bread or over mashed potatoes.

Tips:

  • You can use other vegetables like green beans, corn, or squash in this recipe.
  • You can thicken the stew by mixing 2 tablespoons of cornstarch with 2 tablespoons of water, and stirring it into the stew in the last 30 minutes of cooking.
  • You can add some spice to the stew by adding a pinch of cayenne pepper or red pepper flakes.
  • You can also add some more flavor by using chicken with bone or adding some bacon or pancetta to the recipe.
