- 3 cups cooked lentils

- 1 can diced tomatoes
- 1 can coconut milk
- Salt and pepper to taste
First, heat up the olive oil in a large pot over medium heat. Add the onions and cook until they start to soften, about 5 minutes. Add in the garlic and continue to cook for another minute.
Next, add the curry powder, cumin, and coriander and stir until the spices are fully incorporated into the onion and garlic mixture.
Drain the can of diced tomatoes and add it to the pot, stirring until it is fully combined with the onion and spice mixture. Then, pour in the can of coconut milk and stir until everything is fully mixed together.
