Ingredients:

  • 2 pounds of beef chuck, cut into 1-inch cubes
  • 1 tablespoon of olive oil
  • 1 large onion, chopped
  • 3 cloves of garlic, minced
  • 4 medium-sized carrots, peeled and sliced
  • 2 stalks of celery, sliced
  • 6 red potatoes, quartered
  • 4 cups of beef broth
  • 1 tablespoon of tomato paste
  • 2 teaspoons of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of dried thyme
  • 1 bay leaf
  • 2 tablespoons of all-purpose flour
  • 2 tablespoons of water
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Turn on your Instant Pot and press the "sauté" button. Once the pot is hot, add the olive oil.
  2. Add the beef cubes to the pot and cook until browned on all sides.
