Healthy Quinoa Salad Recipe

Quinoa is a great ingredient to include in a healthy salad recipe because it is a complete protein and a good source of fiber and minerals. One recipe you could try is a simple and delicious quinoa salad.

Ingredients:

  • 1 cup quinoa
  • 2 cups water
  • 1/2 tsp salt
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro
  • 2 cloves of garlic, minced
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • Salt and pepper, to taste
  • 1/2 cup diced tomatoes
  • 1/2 cup diced cucumber
  • 1/2 cup diced red onion
  • 1/2 cup crumbled feta cheese

Instructions:

  1. Rinse the quinoa in a fine-mesh strainer and place it in a pot with the water and salt. Bring to a boil, then reduce heat to low and cover the pot. Simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
  2. Remove from heat and fluff the quinoa with a fork. Allow to cool.
  3. In a small bowl, whisk together the olive oil, lemon juice, parsley, mint, cilantro, garlic, cumin, smoked paprika, salt and pepper.
  4. In a large bowl, combine the quinoa, tomatoes, cucumber, red onion, and feta cheese. Pour the dressing over the top and toss to combine.
  5. Serve at room temperature or chilled.
