Healthy Quinoa Salad Recipe

Ingredients:
- 1 cup quinoa
- 2 cups water
- 1/2 tsp salt
- 1/4 cup olive oil
- 1/4 cup lemon juice

- 1/4 cup chopped fresh cilantro
- 2 cloves of garlic, minced
- 1/4 tsp cumin

- 1/2 cup crumbled feta cheese
Instructions:
- Rinse the quinoa in a fine-mesh strainer and place it in a pot with the water and salt. Bring to a boil, then reduce heat to low and cover the pot. Simmer for about 15 minutes, or until the water is absorbed and the quinoa is tender.
- Remove from heat and fluff the quinoa with a fork. Allow to cool.
- In a small bowl, whisk together the olive oil, lemon juice, parsley, mint, cilantro, garlic, cumin, smoked paprika, salt and pepper.
- In a large bowl, combine the quinoa, tomatoes, cucumber, red onion, and feta cheese. Pour the dressing over the top and toss to combine.
- Serve at room temperature or chilled.
