Coconut Green Curry Lentils
- 1 cup green lentils, rinsed and drained
- 1 can full-fat coconut milk
- 1 cup vegetable broth
- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tablespoons green curry paste
- 1 tablespoon soy sauce
- 2 cups spinach leaves, chopped
- 1/4 cup fresh cilantro, chopped
- Salt and pepper, to taste
Instructions
- In a large saucepan or pot, heat the olive oil over medium heat. Add the onion and bell pepper, and sauté until softened, about 5 minutes.
- Add the garlic and ginger, and sauté for another minute, until fragrant.
- Add the green curry paste and sauté for 1-2 minutes, until it becomes fragrant and slightly toasted.
- Add the vegetable broth, coconut milk, soy sauce, and lentils. Stir to combine, and bring the mixture to a simmer.
- Cover the saucepan or pot, and simmer for 25-30 minutes, or until the lentils are tender and the curry has thickened.
- Stir in the chopped spinach and cilantro, and season with salt and pepper, to taste.
- Divide the curry into bowls, and serve with steamed rice and naan bread, if desired.
